Linguini with Shrimp

Serves: 4

Recipe ingredients
6 ounces of cooked linguini
8 ounces sliced white or mixed mushrooms
2-3 ounces of chopped spinach, (frozen & thawed)
1 tbsp dehydrated shallots
1/2 cup white wine
1/4 cup half & half (milk & cream)
1/4 tsp salt
8 ounces cooked shrimp
1/8 tsp black pepper

Recipe directions
Cook the pasta in boiling water until tender, approximately 6-8 min.

Sauté the sliced mushrooms in olive oil until lightly brown, approximately 3 min.

After the mushrooms are sautéed, add the thawed spinach, dehydrated shallots and cook for 3 min. or until hot.

In a sauce pan, prepare a sauce with the white wine, half & half, salt & black pepper. Add the sautéed mushrooms, cooked spinach and shallots and heat he sauce to serving temperature.

On a platter, mix the cooked linguini with the sauce and top with the cooked shrimp.
